Shaping the Future of Food: Entropy Restaurant Selected for EU and Brussels Climate Programs

Entropy Restaurant is proud to be among the winners of two major public calls for projects: the EU TASTE programme and the City of Brussels Climate Plan. This recognition highlights not only the quality of our culinary work, but also our broader mission to actively contribute to a more sustainable, resilient, and inclusive food system.

Selected alongside other innovative Brussels initiatives, Entropy stands out for its holistic approach to food. More than a restaurant, Entropy is a living project at the crossroads of gastronomy, education, and social impact.

More Than a Restaurant

At Entropy, food is a powerful tool for change. Our project is built around three core objectives that guide everything we do.

1. Sensitizing for better food ecosystems

Entropy aims to raise awareness about the environmental, social, and economic impacts of what we eat. Through our menus, events, and collaborations, we encourage citizens, professionals, and institutions to rethink food systems, from sourcing to consumption. Seasonal, local, and plant-forward cuisine is not a trend for us, but a commitment to healthier ecosystems.

2. Training others in plant-based cuisine and kitchen execution

Knowledge sharing is at the heart of Entropy’s mission. We provide training and hands-on support for professionals, students, and organizations wishing to develop plant-based cooking skills. From recipe development to kitchen execution, our approach bridges creativity with practicality, helping others integrate sustainable practices into real-world kitchens.

3. Reducing food waste and food precarity

Entropy actively works to reduce food waste by optimizing ingredients, valorizing surplus products, and designing menus with efficiency in mind. At the same time, we engage with initiatives that address food precarity, ensuring that good food can also be accessible, fair, and socially impactful.
