Being named among Belgium’s personalities of tomorrow is not an end in itself. For Elliott Van de Velde, it is first and foremost a recognition of a consistent, long-term commitment built around a simple belief: food can — and must — be approached more responsibly.

A self-taught chef, Elliott Van de Velde became involved early on in the fight against food waste. In 2019, this commitment took concrete form with the creation of Hearth Project, a non-profit organization that recovers unsold food and transforms it into meals for people in vulnerable situations. A hands-on initiative, rooted in real needs rather than rhetoric.

Entropy: Where Circularity Meets Gastronomy

Opened in Brussels in 2022, Entropy is the natural extension of this philosophy. The restaurant operates as a culinary laboratory where recovery, seasonality, and creativity go hand in hand. Nothing goes to waste: nearly 80% of food ingredients are recovered, transformed, and reused.

Rather than positioning sustainability in opposition to gastronomy, Entropy shows how the two can reinforce each other. The restaurant also directly supports Hearth Project, forming an ecosystem in which cooking, solidarity, and environmental responsibility are closely connected.

A Vision Focused on Sharing and Education

The recognition by Trends-Tendances also highlights a desire to share knowledge and experience. Elliott Van de Velde’s ambition extends beyond a single restaurant or concept. In the longer term, the goal is to develop a center dedicated to sustainable food, combining dining, education, and awareness, in order to pass on practical skills and encourage more responsible food practices.
