Rather than focusing purely on rankings, it has chosen to highlight pioneers across European countries — restaurants that lead the way in sustainable gastronomy while also creating a movement and mobilising communities around this approach.

We are deeply grateful to be recognised among these 25 restaurants. For years, we have looked up to many of them and admired their work.
