Entropy at Manger Mieux Demain: tastings & sustainable food workshops

Tasting, sharing, learning together: a look back at Manger Mieux Demain, where we shared our approach to plant-based cuisine & sustainable food

How do you inspire people to eat differently? At Entropy, we like to start with pleasure: an unexpected flavour, an ingredient rediscovered, a conversation that opens up new possibilities.

During Manger Mieux Demain, we brought this approach to life through tastings and workshops dedicated to sustainable food. Two complementary ways to share our work: discovering through taste and taking time to reflect together on what we eat.

Tastings to discover plant-based cuisine

The tastings gave us an opportunity to connect with visitors through Entropy’s cuisine and demonstrate the many possibilities offered by plant-based ingredients.

For Elliott Van de Velde, working with plants begins with curiosity: exploring textures, finding balance and revealing the character of each ingredient. This approach shapes our desire to create a cuisine that gives vegetables a central place.

At Manger Mieux Demain, taste became a starting point for conversation. A single bite can spark the desire to discover an ingredient, try a different way of cooking or look at the food on our plates with fresh eyes.

Workshops to explore sustainable food

Our participation also included workshops on sustainable food: opportunities to share knowledge, welcome questions and discuss our eating habits.

Eating more sustainably raises many questions: seasonality, where ingredients come from, the role of plant-based foods, food waste and everyday practical constraints. These topics deserve accessible spaces for discussion, where everyone can contribute their experience.

This is the spirit we want to bring to our workshops: encouraging curiosity and helping people find ideas that fit their own circumstances. The pleasure of eating and the pleasure of learning can go hand in hand.

From cooking to sharing knowledge

Our participation reflects the ongoing work of Entropy and Hearth Project: cooking with care, making the most of food resources and sharing what we learn.

For us, cooking is a creative practice and a way to bring people together. It allows us to explore practical questions and connect people with different experiences around something that concerns us all.

Thank you to the organisers of Manger Mieux Demain, everyone involved in the event and all those who joined us to taste, participate and exchange ideas.
