Entropy is more than just a restaurant: we cater events from 20 to 600 guests, always guided by the same philosophy of sustainability and plant-based cuisine, both indoors and outdoors.

Entropy was selected by ABN AMRO to cater its “Tomorrow / Smart Living” event, dedicated to the cities of tomorrow, innovation, and new ways of inhabiting the future.

Hosted in the iconic Gare Maritime building in Brussels, the event gathers nearly 400 guests around conferences, encounters, and discussions.

For Entropy and chef Elliott Van De Velde, it is an opportunity to express a contemporary vision of plant-based cuisine. A tailor-made culinary design was imagined for the client, highlighting a transgenerational approach to food.

A PLANT-BASED CUISINE TO TALK ABOUT THE FUTURE

For several years, Entropy has embraced a vision of cuisine where plant-based cooking becomes a true space for reflection. In the city of tomorrow, cooking seasonally and working with local producers are part of a broader vision of food resilience within our territory.

This menu does not simply aim to feed people, but to tell a story: our relationship with nature, memory, the elements, and the evolution of the way we live.

THE FOUR ELEMENTS AS A COMMON THREAD

To open the evening, a series of amuse-bouches inspired by the four elements was created.

First, air. Light meringues were placed on an airy metal structure, almost suspended in space, accompanied by brightly colored edible flowers. The textures were intentionally fragile, delicate, almost ephemeral — a way of expressing movement, lightness, and the invisible.

Then came fire. Served in golden spoons, these bites played with smoky, grilled, and more intense flavors. A cuisine that felt warmer and more direct, evoking transformation and energy.

Next came water, built around an oyster shell as a decorative element, submerged in a tray of plastic symbolizing today’s oceans. On top sat a refreshing sorbet and a delicate koji mousse.

Finally, earth. Small tartlets served on black trays celebrated roots, vegetables, and deep flavors. A plant-based cuisine that felt both grounded and futuristic.

A MENU BUILT AROUND TIME AND LIFE

The tasting menu extended this reflection on the future through another interpretation: the different stages of life.

Each bite represented a moment of existence.

First came childhood: a carrot bite served on a spoon, inspired by childhood purées. A soft, creamy, comforting texture imagined as a first food memory.

Then adolescence, represented through a ravioli filled with peas and green oil, accompanied by pea shoots and pea flowers, creating a vibrant green composition.

Next came adulthood, centered around heated potato, also transformed into a mousse with a crispy puffed texture.

Finally, the senior years: a green soup served with a beautiful zucchini flower.

Taking part in ABN AMRO’s “Tomorrow / Smart Living” event makes perfect sense to us.

This evening at Gare Maritime reminds us of one essential thing: imagining the future often begins around a table.
