Entropy closes its restaurant to build a food innovation incubator

Entropy is temporarily closing its restaurant to launch a European project on sustainable food and build an incubator for future food systems.

A new chapter for Entropy: closing to transform

After eight years of entrepreneurship, collaboration, impact, and experimentation, we are opening a new chapter.

And it begins with a bold decision:

to temporarily close the Entropy restaurant.

But to understand why, we need to go back to the beginning.

From intuition to mission

Eight years ago, we launched HeartH Project with a simple yet powerful idea: to reconnect food with what it should be — human, sustainable, and accessible.

Very quickly, we faced a stark reality:

in Brussels, 1 in 5 people experiences food insecurity, while one-third of all food produced in Europe is wasted.

A paradox.

A trigger.

We began by organizing gastronomic dinners using surplus food, with profits donated to organizations such as Médecins Sans Frontières, Médecins du Monde, and the Citizen Platform.

The Covid turning point

When the pandemic hit, we chose action.

Together with around thirty incredible volunteers, we cooked, repurposed, and delivered meals for hospital staff and vulnerable communities.

For 18 months, we produced up to 1,500 meals per week.

Borrowed kitchens.

Trucks.

Helping hands.

A powerful collective momentum.

The birth of Entropy

By the end of 2021, the project evolved.

We secured funding, built a team, and opened Entropy, in Place Saint-Géry.

A restaurant with a clear vision:

  • Gastronomic yet accessible
  • 100% plant-based
  • Local, seasonal, zero-waste
  • Deeply committed

From Sunday to Tuesday, we produced social meals.

From Wednesday to Saturday, we served our guests.

Beyond the restaurant

Four years later, we’ve gone further than we imagined.

But beyond recognition, what matters most is what we’ve proven:

That it is possible to build a viable business rooted in strong values.

  • Fair working conditions
  • Respect for our 45 direct suppliers
  • Inclusive cuisine
  • Continued support for local associations

And yet, something became clear.

Scaling impact

If we’ve learned one thing, it’s this:

For impact to truly matter, it must become systemic.

It needs to be:

  • more accessible
  • more educational
  • more scalable
  • and go beyond a single place

That’s why, starting in 2027, we will launch a European-scale research and documentary project on food systems.

A new ambitious project

Over three years, the project will include:

  • Advocacy
  • Training and consulting
  • Field interventions
  • Accessible educational content

Think of it as a “Bill Nye / MythBusters of food.”

With one goal:

to restore food ecosystems aligned with real human needs.

The project has already secured European funding and will begin in Brussels before expanding further.

What comes next

This is not an ending.

It’s a transition.

Our long-term vision is to create a broader, more impactful space:

an incubator and community training hub for the future of food.
